How big does a bald cypress get and how long does it live?
50-70 ft tall by 20-30 ft wide in landscape use with moderate growth (Morton), taller in good ground. Age is effectively not a limiting factor — silvics records 400-600 year trees as common in virgin stands with some approaching 1,200 — so removals are driven by siting, and while a tall straight trunk with little branch structure rigs easily, the height and haul volume put it in the upper price bracket.

Knees are the root issue and they are conditional: Forest Service silvics describes them rising off lateral roots only where soil is saturated, ranging from a few inches to over 12 ft near open water. A cypress in a normally drained lawn usually produces none, but one at a basin edge will fill the mowing strip with wooden cones that destroy deck blades — and cutting them off is a repeating bill that wounds live roots, not a fix.
